Latke Latke

A new New Years Day tradition, I think.  We followed the recipe from the Post Punk Kitchen, though we used a little more onion.  We spun the potatoes in the salad spinner, then did the crazy towel twist thing (described here as the greatest latke trick of all time).

Vegan sour cream based on this recipe, though I refuse to use silken tofu (went with firm regular) and doubled the lemon and apple cider vinegar.  Pressed the tofu to lose some moisture, and came out nice and thick.  Slight miscalculation: the cider vinegar was from the end of the bottle.  Holy concentrate, Batman.  But it was still gobbled up.

We went with store bought unsweetened apple sauce, but my lovely S hammered out some magic pumpkin muffins (cupcakes -- says Walker) (do you see icing on these?  muffins! -- says S).

Holy cow, I am tired.  And full.

Update:  Oh, yeah!  And black-eyed peas with smoked paprika.  Not quite hoppin john, but close enough for luck?
